This is a little twist on the traditional picadillo con papas. It has the same homemade “salsa de tomate” base but instead of just potatoes, this picadillo is packed with veggies! These are some of the veggies I had in hand but don’t limit yourself. Celery, corn kernels, green beans, shredded cabbage, mushrooms; they are all great in this dish.
I like to serve “Picadillo con Verduras” with homemade beans and rice. Tonight, I was feeling extra fancy and since it was the first day of school, I also made homemade tortillas. What a feast!
What you need to make Picadillo con Verduras
Olive oil
Ground beef
Carrot
Potato
Frozen peas. Canned would also work for this recipe.
Calabacita (Mexican zucchini)
Roma tomatoes
Onion
Garlic
Spices: Salt, pepper and cumin
Fresh cilantro

Helpful tips
The potatoes and carrots will cook first since they are the starchy veggies and take longer to get tender. It is important to cut them roughly the same size so that they cook evenly.
If you like the picadillo more on the dry side (for tacos or tostadas) leave out 1 cup of the chicken stock.
Picadillo con Verdura (Ground beed and veggies)
Ingredients
- 1 tbsp olive oil
- 1 Lb ground beef
- 1 carrot, peeled and diced
- 1 small potato, peeled and diced
- 1 cup frozen peas
- 1 small calabacita, diced
- 2 ripe Roma tomatoes, quartered
- 1/4 piece of onion
- 2 garlic cloves
- 1/2 teaspoon cumin
- 1 1/2 cups chicken stock
- Salt and peppe to taste
- 1 small bunch fresh cilantro
Instructions
- Add the olive oil to a large skillet and place it on medium high heat.
- Add the ground beef and break it up with a spoon. Cook until done.
- Stir the diced carrots and potatoes into the meat and cook for about 5 minutes.
- In a blender, add the tomatoes, onion, garlic, cumin, salt, pepper and chicken stock. Blend until smooth.
- Pour in the tomato sauce, stir, and bring to a simmer. Add the cilantro. Cover and cook for 10 minutes.
- Add the frozen peas and diced calabacita and stir to incorporate. Cook for another 10 munutes
- Taste and adjust the seasoning if needed.
- Serve immediately
