One of the very first cookies I ever made was oatmeal cookies. I was in a cooking class and I was probably twelve or thirteen years old. I remember bringing them home and give them to my mom. She is a great cook and baker so, her opinion was very important to me. I used to keep a recipe book where I wrote all the recipes I made, that little book had so many stains and winkled pages and notes…and sadly I have no idea what happened to it and of course I don’t have that recipe anymore. I would pay good money to get that recipe book back in my hands, not just for the recipes but for all the memories. Anyway, this is a recipe that my mother in law gave to me, it was given to her by a friend. This is a delicious recipe, its chewy and sweet, but I wanted to add something special to them. One of my favorite combinations is orange and cranberry so, I added those two flavors to my cookies. The final product is so perfect and delicious! I made this for a Potluck I had with the ladies from church and it was a hit!
This is how I make them.











Ingredients
- 1/2 cup shortening
- 1 egg
- 1/4 teaspoon vanilla
- 1 tablespoon orange zest
- 1 cup flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 3/4 cups oats
- 1 cup of cranberries
- For the Icing
- 1 cup powder sugar
- 4 tablespoons orange juice
Instructions
- Preheat your oven to 375 degrees.
- In a large bowl, mix the shortening, egg, vanilla extract and orange zest until well combined.
- Add the rest of the ingredients and mix again until everything is just combined. Don't over mix.
- Scoop round balls of cookie dough onto a baking sheet line with parchment paper.
- Bake for 10 minutes.
- If doing icing, let the cookies cool completely on a cooling rack.
- For the icing, mix the powder sugar and orange juice until smooth and thing. Drizzle over cookies. Enjoy!
