I’ve been enjoying Red Cabbage so much lately! One of the things I’ve learned in this whole COVID-19 experience is that you have to be resourceful and creative in order to give your produce a good use and avoid food waste. As it turns out, Red Cabagge is so versatile and so pretty. I mean, look at what we did with this rice! It turned plain cauliflower to a beautiful bowl of red rice.
This rice is infused with two of my favorite flavors, lemon and cilantro. It is tangy, fragrant and so tender. I served this rice with Jalapeño Kebbeh from Afia Foods. It was wo perfect for this rice! the Jalapeño Kibbeh are crispy and meaty with just the right amount of heat. It complements the rice so well! It finish this dish with just a little drizzle of Mexican Cream.
It’s not only a beautiful dish (if I say so myself) but also an easy, fast and delicious one.

Ingredients
- 1 teaspoon olive oil
- 1/4 onion, chopped
- 1 garlic, minced
- 10 oz frozen Cauliflower rice
- 1 cup finely chopped Red Cabbage
- juice 1 lemon
- 1 cup fresh cilantro, divided.
- Salt and pepper to taste
Instructions
- In a food processor, process the cabbage until finely chopped. Set aside.
- In a large skillet add the olive oil and sautee the onions and garlic until fragrant.
- Add the frozen cauliflower and chopped cabagge, add the lemon juice and season with salt and pepper.
- Add 1/2 cup chopped cilantro.Turn the heat to low and simmer for 10 to 15 minutes or until tender.
- Garnish with the rest of the cilantro before serving.

Hi, hun! Thanks for your comment. What I served with this rice are Jalapeño Kibbeh, I did not make those myself, they were sent to me by Afia Foods. They’are absolutely delicious!
