For these bon bons I used a 1 1/2″ cookie dough scoop. The mixture will be dry and crumbly but that is ok, the bon bons shouldn’t fall apart once rolled into a ball. Release the ball from the dough scoop on the palm of your hand and give it a little squeeze, just enough to release the oils, then roll it. Don’t worry if they don’t turn out completely smooth, they will be cover with chocolate and you won’t be able to see the texture.
I used a combination of bittersweet and semi-sweet chocolate, and the flavor was perfect. you can also use white chocolate or almond bark of your choice.
I always like to melt the chocolate on a double boiler because I feel like I can control de temperature of the chocolate better. Just fill a saucepan with about an inch of water and bring it to medium low heat. Once it starts to simmer, turn the heat to low and place the bowl with chopped chocolate on top. just keep the water on a gentle simmer and make sure the bowl with chocolate doesn’t touch the water. Stir until all the chocolate is melted and remove from heat. If you choose to melt the chocolate in the microwave, melt the chocolate in intervals of 30 seconds and stir after each time.
Peanut Butter Bon Bons
Ingredients
- 1 ½ cups creamy peanut butter
- ½ cup of butter, room temperature
- 1 tablespoon vanilla extract
- 1 teaspoon salt
- 1 can sweetened condensed milk
- 4 cups powder sugar
- 10 ounces chocolate, melted
- Chopped peanuts and kosher salt for sprinkling
Instructions
- In a large bowl beat together the peanut butter, room temperature butter, vanilla, and salt until fluffy.
- Gradually beat in the sweetened condensed milk.
- Add the powder sugar, one cup at a time mixing after each addition. Beat until well incorporated. The mix will be a little dry and crumbly.
- Scoop out the mix and roll into 1 ½ inch balls. If you have a hard time shaping the mix, give it a little squeeze with your fingers. This will release the oils and will make it softer and easier to roll.
- Place the balls into a baking sheet line with parchment paper and chill until firm. At least 1 hour.
- Once chilled, drop one ball at time into the melted chocolate. Using a fork, roll it around to completely cover it in chocolate. Pick up the ball with the fork for at tap on the edge of the bowl to let the extra chocolate drip back into the bowl. Place the bon bon back on the prepared baking sheet.
- Sprinkle the top of the bon bon with chopped peanuts or kosher salt. You can also drizzle some more chocolate on top. Repeat with the remaining bon bons.
- Place the bon bons back in the refrigerator and chill until the chocolate is completely set. 1-2 hours.
- Enjoy!
