Bolitas de Nuez/ Pecan Balls

It’s cookie season! These are some of my favorite cookies to make and of course to eat. Bolitas de Nuez (AKA Pecan balls) are delicate and delicious, they’re not overly sweet so they’re perfect to eat with a cup of hot tea or coffee.

There are many versions of these cookies but I find this one to be easiest. Inspired by an old Mexican recipe, these cookies are perfect for the season. All you need is a few ingredients, clean hands, and one bowl! Yes, you don’t even have to use your stand mixer. Pretty fantastic, I would say.
