It’s cookie season! These are some of my favorite cookies to make and of course to eat. Bolitas de Nuez (AKA Pecan balls) are delicate and delicious, they’re not overly sweet so they’re perfect to eat with a cup of hot tea or coffee.
There are many versions of these cookies but I find this one to be easiest. Inspired by an old Mexican recipe, these cookies are perfect for the season. All you need is a few ingredients, clean hands,

I measured 1 cup of pecan halves and then pulsed a few times in a food processor until finely chopped.
These are very delicate cookies handle with love and care.
Ingredients
- 2 cups all purpose flour
- 1 cup unsalted butter (room temperature)
- 1/2 teaspoon salt
- 1 teaspoon vanilla (I use Mexican Vanilla)
- 1 cup chopped pecans
- 1 cup powder sugar, divided
Instructions
- Preheat oven to 350 Degrees and lined a baking sheet with parchment paper.
- In a mixing bowl, mix the flour, salt, and 1/2 cup powder sugar.
- Add the butter and mix the ingredients with your hands until it becomes a soft dough. You know is ready when it doesn’t stick to your hands anymore. Add the vanilla and chopped pecans and knead until well incorporated.
- Form small balls (I used 1 tablespoon as measurement) and arrange them on a baking sheet.
- Bake for 15 to 20 minutes until slightly golden brown.
- While they’re still hot, roll them into the rest of the powder sugar and let them cool completely on a cooling rack.
