I have been enjoying my Air Fryer so much lately! I love how quickly it cooks vegetables, and that brown crispy finished is just so pretty.
I have made a few things in it, specially vegetables, and one of my favorite thigs so far are these Crispy Pepper Rings and Spicy Crema. My lovely neighbor has a vegetable garden and gave me a bag with an assortment of peppers that needed to be cook pretty quick. They were perfect for the air fryer! I used a mixture of almond flour and parmesan cheese because I wanted to keep it Gluten Free but also because the combination of these two makes a perfectly delicious crust. The Spicy crema is one of my favorite dipping sauces, I make it with Mexican crema, chipotle and cilantro. Very simple and very delicious.
I am tempted to knock on my neighbor’s door and see if by any chance she needs to get rid of more peppers.
