It is a big accomplishment to make something my picky kids approve and authorize to include in our dinners rotation. I don’t believe in kids food and grown ups food, food is food. But I am also patient and let them try new foods at their own pace. Yesterday they went from plane roasted chicken to chicken bites marinated in Dijon mustard, lemon juice and garlic. Hurray!
We called this dinner: Sheet Pan Chicken Bites. I cut boneless-skinless chicken bites, marinated them in Dijon mustard, lemon juice and garlic. Cook them in the oven for 30 min and finish them with a big sprinkle of parmesan cheese and parsley. I served the chicken over butter garlic spaghetti and that my friends, is a recipe for success.

I like to serve this chicken over butter garlic spaghetti.
Ingredients
- 1 1/2 to 2 LB boneless skinless chicken thighs
- 2 tablespoons Dijon Mustard
- Juice 1/2 lemon
- 2 garlic cloves, minced.
- Salt and pepper to taste
- Grated parmesan cheese
- chopped parsley for garnish
Instructions
- Cut the chicken thighs into bite size pieces and transfer to a bowl.
- Add the Dijon mustard, lemon juice and minced garlic. Season with salt and pepper.
- Cover and marinate in the fridge for 30 min to 1 hour.
- Preheat oven to 400 degrees and spray a sheet pan with cooking spray.
- Arrange the chicken on the sheet pan and bake for 30 minutes or until well done.
- Sprinkle with parmesan cheese and fresh parsley before serving.
- Enjoy!
